Sohan asali, literally "honey sohan", is a classic sweet of Isfahan: whole nuts coated in a glossy caramel of sugar, honey, butter and saffron, then set into small bite-size clusters. Unlike Qom sohan there is no flour at all, so every piece is mostly nut, with a clean crack and a deep honey-saffron flavour. Choose the traditional almond version or the richer cashew one.
In Pakistan, sohan asali sits naturally beside dry fruit on a winter platter, and it is a smart addition to Eid boxes and wedding favours because the pieces are small, neat and do not crumble. Serve a few with doodh patti when guests drop in, or keep a box in the car for long drives.
