Qurut (also spelt kurut or krut) is yogurt that has been strained, salted, rolled into small balls and dried until hard. It is loved across Iran, Afghanistan, Central Asia and Pakistan's Pashtun and Baloch belt, where it is sold loose in the bazaars of Quetta and Peshawar. The flavour is sharply sour and salty, and each ball slowly softens as you suck on it.
Most people enjoy qurut as a snack, especially children and anyone who craves something sour after a heavy meal or on a long journey. It can also be soaked and mashed into a tangy sauce for qurutob, the Tajik and Afghan dish of bread, onions and ghee, or crumbled into soups and stews for a savoury kick.
