Kolompeh is the best-known sweet of Kerman, the south-eastern province that also grows Iran's famous Mazafati dates. A tender, buttery pastry is wrapped around a thick layer of date paste flavoured with cardamom, pressed into a round and stamped with a traditional pattern before baking. It is soft rather than flaky, with the natural caramel sweetness of Kerman dates.
Because it is built around dates, kolompeh is a natural fit for Ramadan: a piece at iftar with tea or milk is filling and satisfying.
