Kashk is one of the defining flavours of Persian cooking: a thick, tangy, savoury dairy made from yogurt that has been strained, cooked and concentrated. Traditionally it was dried into hard balls and soaked before use, but Kalleh's pasteurised liquid kashk comes ready to spoon straight from the jar, smooth, salty and pleasantly sour with a cheesy depth.
Use it the Iranian way to finish kashk-e bademjan, the smoky roasted aubergine dip served with naan, or swirl it over ash reshteh and other winter noodle soups.
