Gaz is the famous nougat of Isfahan, made for centuries from egg white, sugar, rosewater and gaz angebin, a natural manna gathered from wild shrubs in the Zagros mountains. Our pistachio gaz follows the classic Isfahan recipe: the mixture is beaten until light, folded with a generous share of whole green pistachios and cut into bite-size rounds dusted with flour so they don't stick. The result is soft and chewy, lightly floral and never cloying.
In Pakistani homes gaz has become a favourite way to show mehmaan-nawazi. Set out a plate with doodh patti or green tea when guests arrive, carry a box to relatives at Eid, or add it to wedding and mithai trays when you want something different from barfi and gulab jamun.
