Kishmish sabz are the long, slender green raisins that fill dry-fruit shops across Pakistan every winter. Ours come from Iran's raisin belt around Malayer, where seedless grapes are dried slowly in the shade rather than in direct sun. Shade-drying keeps their olive-green colour and gives them a tangy-sweet, almost honeyed flavour and a pleasant chew.
These are the raisins for Kabuli pulao and biryani garnishes, for sprinkling over kheer, sheer khurma and zarda, and for mixing with almonds and walnuts in the winter dry-fruit bowl. Soaked overnight, a small handful is a morning habit in many homes, and children enjoy them plain in lunchboxes instead of sweets.
