Dried white mulberries, or toot, are small, pale berries with a naturally honey-like sweetness and a pleasant crunchy-chewy texture. White mulberry trees are grown across Iran, and in early summer the ripe berries are shaken from the branches and sun-dried until light golden. Nothing is added: the sweetness is entirely the fruit's own.
In Pakistan, toot or shehtoot is a familiar dry fruit in the north and in Khyber Pakhtunkhwa, where it is eaten by the handful in winter alongside walnuts and almonds. Try them with chai instead of biscuits, sprinkle them over oats, yoghurt or kheer, or mix them into a homemade trail mix for children's lunchboxes. They also sit nicely on a nut platter for guests.
