These dried apricots are whole, pitted fruit dried until soft and chewy, with a bright orange colour and a sweet-tart flavour. Iran is one of the world's major apricot growers, and its dried khubani is valued for plump fruit and a clean, fresh taste. Each apricot is stoned, so it is ready to eat or chop straight from the pack.
In Pakistan dried apricots are part of the winter dry-fruit bowl alongside almonds, walnuts and anjeer. Simmer them with sugar and cardamom for khubani ka meetha, the Hyderabadi wedding dessert, chop them into kheer, custard and trifle, or add a few to mutton pulao for a sweet-sour touch.
